King Prawn & Bacon Skewers with a Crunchy Apple Salad

The prawns love the bacon. The bacon loves the apple. The cider vinegar loves the salad. The salad loves the garden, the garden loves the last bit of alfresco dining this year! 



If you follow me on social media you may have seen that I foraged about 35 apples a few weeks ago. Determined not to turn them into the standard sugar-laden recipes such as pies, jams, crumbles and other (delicious) preserves, I've created a short series of recipes which includes 100% Pure Apple Crisps, this one and Foraged Apple Porridge with Cinnamon and Ginger you can find them by using the drop down recipe menu at the top of this page.

Yesterday was officially the first day of Autumn so celebrate by getting your apples, squashes, pumpkins, kale, red cabbages, sloes and involved in some fantastic halloween-y coloured dishes. 
What's with the oranges, purples, greens being in at the same time as halloween?! nature wants to dress up too! 

(So hyped to reveal my halloween costume this year! The Boy and I are going as a duo)

This recipe is easy - just wrap as many prawns as you want  (I used 10) in pieces of bacon around 1x3 inches big and then feed onto a skewer which has previously been soaked in water so that it won't burn on the griddle. 

Chop up whatever salad items you want/have/like/need to use up and arrange in a bowl. I used red, yellow and green peppers, spinach, cucumber and apple and dressed it with two parts cider vinegar to one part olive oil, salt, pepper and a squeeze of lemon juice.
