Maple and pork skewers with rocket and lemon rice


Sometimes I forget that pork can come in other forms than just chorizo. Who else is guilty of eating copious amounts of the spicy salty Spanish sausage? Same can be said for bacon. Chorizo and bacon followed by pork belly are my top three forms of pork. It's funny that it's all from the same animal really, isn't it?!

I bought a pack of stir fry pork because it was on offer and just threw it in the freezer and forgot about it until a few days before payday when my bank account was looking unhealthy and the emergency food reserves were called up to serve their duty.

Who knew that the pork could do such a good job!

White rice is RARELY cooked here at RR headquarters however, again I was skint and this meal was thrown together using cupboard reserves but it worked well as the pork has an Asian feel to it and white rice is a staple in Oriental cuisine. Lemon cuts through the sugary mapley goodness as does peppery rocket so overall you've got one flavour-packed, cheap quick dinner.

Ingredients
Marinade:
300 Stir-Fry Pork
3 Tbsp Maple Syrup
2 Tbsp Light Soy Sauce
2 Crushed Garlic Cloves

2 Big handfuls of Rocket
Juice of 1/2 a Lemon and a Little Grated Zest 
2 Cups of White Rice
Salt & Pepper

HOW TO MAKE

Marinade your pork for as long as you can - overnight if possible for maximum flavour. I honestly only did mine for about 30 minutes because I was waiting for it to defrost but you can also add the marinade to the frozen meat and let it defrost into as well so that it absorbs the flavours as soon as it can.

Get messy and stuck into the pork with your hands by threading it onto the skewers. It will smell amazingly sweet and delicious and be tempting to lick it but OBVIOUSLY don't.

Boil your rice which should take around 15 minutes if it's shortgrain so you can get your rocket all washed in the mean time and set aside to go. The pork skewers will take around 10-12 minutes to cook so when your rice is getting started, heat up the griddle. 

Cook the pork until it's nicely browned all over. No longer than 15 minutes else it will be too dry and overcooked. Drain your rice, add the lemon juice and a drizzle of olive oil and fluff it up. 

Clump your rocket into a ball with your hands and press onto the rice before laying the skewers over the top and finishing with a little lemon zest to decorate.

BOOM!
