Paleo Banana Breakfast Split With Summer Berries, Coconut Yoghurt, Almond Butter & Superfood Chocolate

A Dairy-free, vegan, paleo/ketogenic twist on Jamie Oliver's Super-Fruit Breakfast Wraps recipe


This is the first of this year's recipe twists series on Jamie Oliver's Mini super-fruit breakfast wraps as one of his Food Revolution Ambassadors! 

With a focus on simple, easy and fast food, Jamie's recipe says “This brilliantly quick recipe is easy to make in the morning before school, and will fuel your body in the right way. Blueberries and raspberries are a fantastic choice here, but feel free to swap in your favourite fruit, or whatever you have at home. Enjoy! " 

My twist is to make it paleo and ketogenic - Swapping out the bread and adding almond butter for protein, fat and fibre alongside coconut yoghurt making this recipe dairy free too and vegan. 

Ingredients

1 banana, peeled
2 tbsp almond butter
3 tbsp coconut yoghurt
3 tbsp frozen summer fruits, defrosted
1-2 squares of super food chocolate, chopped

Note, this isn't coconut flavoured yoghurt, it's actually yoghurt with live cultures made from coconut milk. It's available in most large supermarkets now near the dairy free yoghurts and tastes amazing. 

My go-to almond butter is Meridian as they do a almond butter and coconut oil mix which is just heaven and so difficult not to just murder a whole jar in one sitting. 

Yet the icing on the cake here; the really exciting ingredient in this is the superfood chocolate. Made by the company IQ, it's new on the scene and boasts all natural ingredients. It brings you the happiness of chocolate minus the negative effects of eating sugar and other unnecessary additives. Check them out, they do lots of different flavours. This one is cocao-nib crunch :) because, everything is better with a little chocolate, right?




This recipe could double up as a dessert if you wanted it to but eating fruit in the morning is better for your digestion and your body's PH levels.  

How To Make

Cut your banana in half lengthways
Smear it with almond butter
Drizzle that with coconut yoghurt
Spoon a few spoonfuls of berries on top
Finish with chopped chocolate

And you can do this in any order you like and it will still be amazing, OK?
