Ketogenic Naked Breakfast Burrito Bowl

Buttery, scrambled eggs with chorizo atop creamy guacamole surrounded by peppers, corn, lettuce, red onion, tomatoes, mozzarella and cheddar finished with some Mayan Ruins hot sauce and coriander. Muy sabroso!

With a nod to all the usual Mexican flavours - the avocado, the corn, the deeply-flavoured tomatoes, the cheese (how can we forget the cheeeese) The hot sauce and the spicy meat; by turning this ketogenic, we are only omitting the beans and rice and is that really such a bad thing when you have all these fantastic players subbing an already outstanding team? 

This colourful mix of protein, fibre and antioxidants is a sureFIRE way to start the day. Or finish the day. If you want!

It's remarkably filling so it'll do you for ages! 



Ingredients (serves 2)
2-3  eggs
50g Cheddar/mozarella grated
6 Large cherry tomatoes, sliced
Two large handfuls of peppers, assorted colours, sliced
1/5 a Red onion - sliced
1 Avocado
4 tbsp Sweetcorn
Lime wedges, to serve
1 little gem lettuce, shredded
30g Chorizo - sliced
Handful coriander, torn
Olive oil
Salt & pepper 

How To Make

Get yourself your lovely ripe avocado and spoon into a bowl with a bit of the chopped onion, 2 of the chopped tomatoes, a glug of olive oil, salt, pepper and a big squeeze of lime and mash mash mash until you have some chunky guacamole. Set aside. 






Arrange your salad items beautifully in the bowl leaving a space for your guacamole and chorizo egg mix...






Melt some butter in a pan before adding the sliced chorizo and fry for 3-4 minutes. Then crack two eggs in and stiry occasionally for a further 2-3 minutes. Season and remove from the heat. Don't over cook them. 









Add your guacamole to your bowls and spoon half of the egg mix onto each. Finish with extra seasoning and the coriander and some hot sauce if you're brave enough. Mine was Mayan Ruin from a "world traveller hot sauce" selection pack I got for my birthday.
