Paleo Cherry Bakewell Pancakes

 Rich, tart cherries spilling over warm almond pancakes fried in butter topped with flaked almonds. A paleo version of a nation's favourite desert, the bakewell tart. In pancake form.



This recipe is the penultimate in Jamie Oliver's healthy breakfast series of which us Food Revolution Ambassadors are creating twists!
This particular Paleo Cherry Bakewell Pancakes recipe is a twist on his One-Cup Blueberry Pancakes which you can find here.
I got into pancakes earlier this year and was treated to some very naughty ones - filled with Maltesa and Bounty spread. They were sexy AF. 

These however are purely paleo. Eat as many as you want!
Ingredients:
For the pancakes:
125g ground almonds
2 eggs
60ml almond milk
1 tbsp honey
pinch of sea salt

For the topping
12 cherries...oh go on make it 14
Some flaked almonds to decorate
1 tbsp honey

How To Make
Wash your cherries, halve and de-stone them. 
Place in a pan with a splash of hot water and 1tsp honey and simmer for around 10 minutes. Turn off and mash a little to release some more of the delicious juices.




Meanwhile mix up your batter. Ground almonds, 2 eggs, almond milk, honey and sea salt. 





Notice how grainy it is compared to traditional pancake batter.



Heat a little grass-fed butter in a non-stick pan on a low heat and drop a dollop of batter into the pan
Cook for 1-2 minutes on each side before adding to a warm plate. Repeat until all the mix is done!



Stack!



Gather your beautiful toppings.... (some double cream is also super sexy with this)


Dress it...

And carve it up, baby.

Dayum!

I ate mine for dinner, well half and took the rest to work for pre-gym fuel!
