Poached Eggs With Crispy Baked Broccoli Pakoras

 Add an Indian influence to your breakfast with these crispy broccoli pakoras to dip into the gooey yolk of a poached egg!






This is a recipe twist as part of the ten twists on Jamie's breakfast recipes that some of the Food Revolution Ambassadors are doing this year and being one of them, this is my spin on his Silky Masala Eggs 

I absolutely LOVE eggs, especially poached eggs and even better when they're combined with something spicy! These are lightly spiced and baked til crispy so they are really fun to have for breakfast because that chilli wakes you UP! Plus, it's cool having something Indian for breakfast, who ever does that?! Especially here in the UK where we're all chowing down on our full Englishes or now so more our smashed avo on sourdoughs! Enjoy! 

Ingredients (serves 1)

1/4 head of broccoli 
1/2 cup flour - gram flour if you've got it, if not use plain flour. 
1/2 cup water
1tsp chilli powder
2tsp garam masala
1tsp ground fenugreek
1tsp cumin seeds 
1tsp ground coriander
2 eggs


How To Make

Preheat your oven to 220 degrees
Cut your broccoli into thumb sized pieces 
Make your batter by mixing the water into the flour a little at a time then stiring in the spices and salt
Dunk all the broccoli in the batter mix and then pour onto a baking tray
Bake for 15 mins until golden round the edges
While they are baking, poach your eggs
Plate up with a little spinach (toast if you want!)
And finish with extra chilli!
