Spanish Chicken with Apricots and Olives

So this week I am in Barcelona! staying with my very funny friend Liam. He's from London and we met whilst working in Spain two years ago. It's bare jokes yo!
As he is letting me stay at his flat with his housemates for a week I have taken to becoming the house cook, which is the least I can do to show my gratitude for their hospitality. On the first night I wanted to cook them a Thai curry but couldn't locate a single strand of lemongrass in the whole of the city so I did this which I have made for my housemates once before. It's a winner.


It's enough for two really hungry people or 4 not very hungry people.

5 chicken drumsticks (big ones)
big handful of dried apricots
big handful of pitted black olives
some shallots 8 or 9 or 2 onions chopped
3 or 4 cloves of garlic
a huge splash of red wine
some oregano
potatoes cut ready to be turned into roast potatoes
rosemary
vine cherry tomatoes left on the vine thank you nature you look so pretty.
one green pepper chopped up chunky

Oven 180 degrees please. (I swear the other temperatures don't get a look in)

put the chicken in a large bowl and put the onions, garlic, wine, oregano, olives and apricots on it and let it marinade for as long as you can

part boil the potatoes, drain and let lots of steam come off them (this is to maximise their crispy ness - letting more water out lets more oil in)

When your chicken is marinaded for as long as possible. Pan fry the chicken drumsticks until they're a bit brown and then add the rest of the marinade to the pan for a minute.

Heat some olive oil in a roasting tray ready for the potatoes to go into.

Transfer the contents of the pan to an oven proof dish with a lid and bang it in the oven.

Tip your drained potatoes into the hot oil and let it sizzle and then sprinkle with rosemary and put back in.

give it about 30 mins but about 12 mins before it's ready just lay the vine tomatoes and chopped pepper on top of the potatoes in the oven to let them roast.


Have some wine. Muy bien senorita!
