The New Jacket Potato: Spicy Chicken Stuffed Sweet Potato Skins with Melted Cheese, Spring Onion & Greens

Sweet Potato Skins loaded with Spicy Chicken, Spinach and Spring Onion topped with Cheese

These were sexual, I urge anyone to recreate them. The chicken was so tasty it could convert hardcore vegans. It makes the standard jacket potato look like a fat slag. This makes four halves, which feeds two average eaters with plenty of extra chicken for you to snack on whilst you're waiting for the cheese to melt in the final stage, yes you veggies tuck in too, go on...I know it's #NationalVegetarianWeek

Ingredients

2 sweet potatoes
1 spring onion
Handful of spinach, rocket watercress or all three
However much cheese you like on top
2 tsp Cumin
2 tsp Smoked paprika
Couple o' glugs o' Olive oil
2 tscp Chilli powder
Salt and pepper
2 garlic gloves
Pack of chicken thighs

Some of the following pictures contain tomatoes - I've made this recipe a few times, and tomatoes are a great addition as they set off the cheese brilliantly but it's up to you :)


Method


PRICK the halved sweet potatoes all over, microwave for about 3.5 mins and get them in a preheated oven at 200 for about 30-40 mins

Marinade your chicken in the olive oil, garlic, salt, pepper, chilli, cumin and smoked paprika. I've thrown it all on top, as pictured below, so you can see the quanities, however use whatever you like.


Give your meat a good old rub and get that in the oven when the potatoes have around 30 minutes of cooking time left to go.

Sit down and have some wine for 20 minutes.

Check on your chicken, when it's succulent and delicious remove from the oven and shred. Cut up your other veg too and grate yo' cheese.

Scoop most of the potato flesh out and save that to use in another dish...maybe for lunch tomorrow? And load the potato skins. 

Top with cheese, don't be shy.


Bake it for another 5 minutes and then top with red onion (optional) and a few drops of tabasco.


Serve with more leaves and some good red wine :-)
