Chocolate Peanut Butter Cups

Quick easy recipe to replicate Reece's peanut butter cups at home in a healthy and even more delicious way!

These are like the Reece's Peanut Butter Cups but without the insane salt content and if you make them at home you can be smug all day knowing you did a good thing. If you make them for someone else you can feel even better! They are super easy and only take about 10 minutes! Serious! Also you can be as healthy or as dirty as you like with them - it's up to you. Use dark chocolate with a high cocoa content to make it paleo as this will omit most of the sugar which makes up most chocolate bars. These were a present for my brother, who loves milk chocolate, though, so I made an exception and made them with Galaxy.

Go and Get:

Jar of smooth peanut butter - leave the stuff containing palm oil - noone's supporting the uprooting of rain forests over here.
Tablespoon of honey
Tablespoon of coconut oil

2 x bars of chocolate of your choice. Go raw. Go dark. Go white. Go crazy.
Topping of your choice - banana goes so well with chocolate and peanut butter. Raspberries would work well with white chocolate :)

Makes 14 cups

1. Bang peanut butter, honey, coconut oil into a glass jug + into the microwave for 20 seconds - don't let it get too hot or it will take longer to freeze and we are aiming for speed here. Take it out and stir it all in. Pour it (that's why we used a jug) into the little cases and put into the freezer.

2. Melt the chocolate in the same way - glass jug, microwave. Stir and pour onto half frozen cakes (they don't take long to set) swirl it round to make it look beautiful.

3. Top with banana slice and sprinkle of demerara (optional) and return to freezer.

Package them up in a little box and give them to someone and watch them get peanut butter all over their nose while making joyous groans.
