Coconut Porridge with Fig, Banana and Chia Seeds

A delightfully nourishing breakfast that takes minutes to make and will keep you full for hours!

Super easy, this will hopefully stop you from simply pouring yourself a bowl of sugar laden cereal. Even muesli which is sold under such a healthy pretense can contain added sugar and other ingredients such as dried fruits which are PACKED with sugar - yes it's natural fructose but it's still sugar and it's concentrated and will still cause your energy and blood sugar levels to spike and then drop, leaving you ratty, irritable and hungry. I'm on a  maximum of two peices of fruit a day at the moment and today eating this is a huge treat for me (it's raining outside and I have the day off so I am in bed, writing and enjoying the comfort!)

The fat in the coconut milk not only tastes amazing but will keep you feeling satisfied and coupled with the protein from the chia seeds and the oats, you will be laughing until lunchtime. 

Serves one:
1 cup wholegrain rolled oats 
about 5/6 tablespoons coconut milk - it squirted all over me when I dug the spoon in today so be careful if it's condensed a little towards the top of the can
splash of water
A little fresh fruit - I used fig and banana but you can use whatever you have 
Sprinkling of chia seeds - they're so good and versatile you can chuck them in anything.

To Make:

Add your oats, coconut milk and water to a saucepan and heat on a low heat, stirring continuously, until the oats have softened - approximately 3-4 minutes - you don't want complete mush, texture is good.
Transfer to a bowl and top with your fruit and seeds
