Chicken and Chorizo Curry with Potato, Red Cabbage, Asparagus and Broccoli

a delightfully lemony curry with smoked paprika chorizo, creamy coconut, colourful vegetables and comforting potato


AUTUMN IS COMING - yes I know I keep saying it but it's true and it's exciting! let's get cosy with coconut, curry, cabbage, chicken, chorizo ALL THE C words! (not all of them, don't be obscene)




Oh lemon zest. You make a meal. You really do.

Ok what do we have here then?

To serve two:

One tin of coconut milk
Most of a chorizo ring (We're greedy and proud, ok)
One large chicken breast
Handful of potatoes - cut up small
Handful of asparagus - halved
Handful of broccoli - medium florets
1/4 of a red cabbage - roughly chopped
One red chilli - chopped small
Zest of one lemon plus juice of half of it
3 crushed garlic cloves - see you later autum colds!

Please use whatever veg you like! it won't really change the flavour, it's whatever you have, can get, like etc.

Lightly fry your crushed garlic in some olive or rapeseed oil and then add the cubed chicken breast and chilli and cook until the chicken is seared all over.
Add the potatoes and coconut milk and then put a lid on it and let it simmer for about 15 minutes or until the potatoes are soft.
Add the other veg and the lemon zest and juice and return the lid.
Fry the chorizo on a griddle until crispy-ish.
Plate up your curry and then finish with the fried chorizo and a little extra lemon zest.

VOILA!
