Fennel, Mozzarella & Avocado Salad with a Chilli & Mango Dressing

Fennel, mozzarella & avocado salad with chilli mango dressing and pistachio nuts.


This salad is a delight: the fruity, sharp dressing with the creamy cheese and avocado works lovingly with the tangy fennel and salty pistachios. Just chuck it all together, come on it's easy...




Now, here's a little secret for you: the dressing was shop bought. Yes, shoot me - my hands are up. It's fine - it's delicious and cheap and of COURSE I checked the ingredients list and sugar isn't that high up. It's from Sainsbury's and is part of their 'be good' range or whatever they call it. £1.20? not bad. If you think salads are dull, get some fun dressings and you'll be looking forward to them in no time. Granted, making your own is better and gives you more satisfaction but we lead busy lives and don't always have a little pot to take our home made dressings to work (note to self: get salad dressing pot).

As always use whatever leaves you want/like but I used watercress because I love how pretty & peppery it is.

Serves one:

One ball of mozzarella - drained and roughly chopped/torn
Two large handfuls of leaves - ripped up a little
About three fingers thick of fennel - sliced
One avocado - sliced
Small handful of salted pistachios, shelled
One drizzling of chilli & mango dressing from Sainsbury's click here to see the product

As with all salads, just muddle all the ingredients together in a bowl, make it look pretty and dress it before serving. Don't forget to season!
