Baked Eggs With Sweet Potato & Kale

Super easy one-pot recipe that requires minimal preparation or washing up. Perfect for a lazy Sunday or a cheap, quick dinner. Full of fibre, protein, vitamins and minerals....

Baked Eggs with Sweet Potato and Kale

Cooking time: 30 minutes. Prep time 5 minutes. Total time: 35 minutes.

Ingredients
  • One Sweet Potato
  • Handful of Kale
  • Two Free range eggs
  • Pinch Sea salt
  • Cracked Black Pepper
  • Paprika
  • Olive oil
  • Chilli Flakes

Cooking Directions
  1. Chop the sweet potato into small chunks and add to the baking tray before drizzling with olive oil and seasoning.
  2. Bake for about 15 minutes on 180 to soften the potatoes a little.

  1. Bring out of the oven, add the kale and make two wells for the eggs. Crack the eggs into the wells, season the whole dish with a little paprika and chilli flakes and return to the oven for another 10-15 minutes depending on how hard you like your eggs.
