Chorizo Brussels Sprouts

A festive side dish to go with a main or a light meal for one. Perfect to turn sprout haters into sprout lovers. When in doubt add bacon. If you don't like sprouts there is a leek version too




Festive Chorizo Greens


I'm sitting here in a food coma writing this because I made two bowls for you so you could see and had to eat them both so please forgive me for any spelling mistakes or unfinished sent

Ok, so the sprouts are out! Put your hand up who doesn't like sprouts? Hmm most of you. Ok. Well we all know the answer to everything is bacon. Bacon is one of the nations favourite foods. It turns vegetarians back to meat eaters, it's easy - we can all cook it and boy is it tasty. Chorizo is like bacon squared. It's better, it's richer, it's saltier it's thicker and it can be spicy. If you didn't like sprouts before, or know someone who doesn't like them, please feed them this recipe. It's easy, it's cheap to make, as always! It takes 10 minutes and it's gorgeous - the room smells amazing whilst they're cooking too. 

This recipe is not just for Christmas, although if you whipped it up on the day it would surely impress and is quick and easy enough as a recipe not to add any extra stress onto the already mammoth task of Christmas dinner. 

As I mentioned earlier if you STILL can't come round to sprouts (hater) then you can do the exact same recipe but with leeks. Please say you like leeks.

Ingredients - serves one as a main or two as a side

1 Chorizo Ring
One bag of peeled sprouts - washed or one leek 
1/4 a red onion
1 clove of garlic
25g salted butter
Salt & Pepper
Chopped Almonds (optional)

So you could make it with leeks or with sprouts or both and mix them together! HIDE the sprouts under the leeks? 

Method
Chop the leek into slices like this or the sprouts into halves

Get your gorgeous chorizo ring and slice it into quarters. I think a quarter per bowl is good but feel free to add more/less depending on how much you LOVE SAUSAGE.

Heat a massive knob of butter on a low heat, don't be shy with the butter you all know it's good for you right? It's going to win food of the year for me.  I always use salted but it's worth bearing mind that the chorizo is salty too.

 Add the onion, sprouts/leek and chorizo, season well with black pepper and put a lid over it. After 5 minutes you're going to add the garlic. 


This will take about 10 minutes to cook with a lid on, on a low heat. Stir it occasionally and enjoy the amazing smell wafting through the air.

If you're doing it with leeks I found they took a little longer to soften because noone wants a raw leek, do they.

When they're done, add your chopped almonds if you want - they just add a little extra texture and sweetness.
