Hasselback Sweet Potatoes

This is so easy: the hardest part is slicing the potatoes so that you don't cut all the way through them! All you need is a couple of sweet potatoes - this makes a great side dish or a snack, whatever you want it to be! Dress it in butter for ultimate simplicity or add something like crumbled feta, red onion and black olives for a snazzier bite. 

Pre-heat your oven to 200 degress

Ingredients

2 Sweet Potatoes
25g Salted butter
Olive oil
Salt and pepper

Method

Slice through your potatoes but not all the way! This is the hardest part and I'll admit, I lost an end! It's not the end of the world, though.



Place it on an oven tray, drizzle with olive oil, season well and bake at 200 degrees for 30 minutes!

When she's done she will be soft throughout and plump looking
