VIDEO: Breakfast Ramen

Eggs and bacon IN a Ramen! What's not to love? Spicy broth and hidden courgetti in place of noodles to start the day with some greens & a kick. 


I absolutely LOVE Ramen and it's so nourishing and such a light meal that you should really get to grips with how to make it. It's also really versatile because you can throw anything you want in it and play around with different noodles, vegetables and goodies such as different types of seafood and/or meat. I'd say a rule of thumb is that it should be spicy and if possible you should have spring onions floating around on top. Like this:


It really sorts you out if you're ill as well, in the same way a chicken broth does but with MORE nutrients and (IMO) way more exciting stuff going on. I had bronchitis for three weeks and felt loads better after a bowl of the above! Food to the rescue again!

Breakfast doesn't have to NOT come floating around in a ramen, does it? So rip up the rule book and add a bowl of spicy broth to yours.

And just to recap, I used

For the broth:

500ml vegetable stock - paleo if you can find it
2 tbsp chilli sauce
2 tsp light soy sauce
2 garlic cloves 

For the components:


2 courgette - spiralized
Handful of cherry tomatoes
1 free range egg, de-shelled
one rasher of bacon- griddled

YUM!
