SIMPLE STEAMED GREENS WITH VINAIGRETTE

Because vinaigrette is FIT as a dressing for hot veg! 
This is another recipe twist as part of The Ambassador's Twists for Jamieoliver.com on his Simple Green Salad With Lemon Dressing.
If you love lightly steamed veg and delicate French dressings, there's no reason why you can't pair them together and have a hot salad to make a change. Dark green veg offers more nutritional benefits than a lettuce such as iceburg - the clue's in the colour; deeper the colour the higher the antioxidant content. Of course you can vary the vegetables to whatever is in season or whatever takes your fancy or just whatever you have in the house! 

Think rich, flavoursome extra virgin olive oil swirled into a quality balsamic vinegar seasoned with sea salt, black pepper and lemon juice drizzled over steamed green veg. 


INGREDIENTS

Veg of your choice
8 Tablespoons Extra virgin olive oil 
3 Tablespoons Balsamic Vinegar
Juice of half a lemon 
Sea salt
Cracked black pepper 

HOW TO MAKE

1. Mix all your dressing ingredients in a jug or cup with a fork really fast whiz whiz whiz 
2. Steam your veg
3. Pour it over the hot veg and enjoy the smell, flavours and beautiful contrasting colours and textures.
