Chilli Turkey, Sweet Potato Mash with Tenderstem Broccoli and Lemon Zest

Chilli turkey on a bed of buttery sweet potato mash, garlicky tenderstem broccoli and roasted cherry tomatoes finished with lemon zest 

Seasonal, tenderstem broccoli lightly sauteed in garlic butter and cherry tomatoes that pop in your mouth make this one summery evening dinner that is set to impress, satisfy, and make you want to shout about it (well, here we are!) 

It's easy to make,  cheap (we're talking some turkey breasts and four vegetables here) and, obviously, it's damn good for you.

Something magical happens when lemon zest hits buttery sweet potato; it's like a lemon cheesecake in your mouth, sweeter than normal and with a less tangy hit from the lemon; it's moreish, to say the least!

This flavour combination happened when I thought the meal could do with something to round it off - colourwise, lemon was the answer (always the visuals supporting the taste)

To make (serves 2) 

  • 2 Turkey Breasts marinated in chilli flakes or fresh chilli and rapeseed oil as far in advance as possible
  • 2 sweet Potatoes, Chopped Small -Skin ON (it's full of treasure)
  • 10-12 Cherry Tomatoes
  • 3/4 Packet of Tenderstem Broccoli
  • 4 Tbsp Salted Butter
  • Lemon Zest  
  • Garlic, Salt, Pepper 
Boil your sweet potatoes until tender, drain, add butter, mash roughly and return to pot with a lid on to stay warm. 
Heat a griddle until smoking hot and add your turkey, turning when golden until cooked throughout (no pinkie bits!)
Meanwhile, heat some garlic in some butter on a low heat in a large wok. Add your broccoli and cover for about 5 minutes. Add your tomatoes. 

Plating up - Make a mount of mash (use a ring here if you want to) add your broccoli with your turkey resting on top and arrange your tomatoes (awwww) Scatter a little lemon zest over the finished dish and some extra black pepper for kicks.
