This is a cheeky afternoon hot drink that will warm your cockles and take the edge off the harsh British winter. Get boozy. Rum enhanced coffee topped with whipped coconut cream. Here's how to make it and it's not even naughty at all...

This is SUCH a COSY drink! It makes all the rainy windy icy weather so much more bearable when you have something like this and you're inside your house with all your comforts around you. Bring on winter.

Look at all that cream spilling over the edge, do you think I overfilled it a bit? 
Yes it was messy to drink but who cares?! Clean up after! It's Christmas, well nearly. 
You could always do it neatly. It wouldn't look as pornographic, though, I think that's half the appeal. 

So, you want to know how to make it? 

Do you have coffee? a little bit of rum (2-3 shots) and a packet of coconut cream?

I used these:
sainsburys coconut cream


and Captain Morgan's spiced rum (as pictured)

Ground coffee is lightyears better than instant coffee but if that's all you have, crack on. 

Now, you can brew your coffee in one of these if you want:
green Italian coffee maker
But personally, I can't be bothered with them (too faffy and not enough coffee) and we are lucky, in our house full of well travelled people, to have a coffee filter from Vietnam (I think) so I'm going to show you how to do it using that:

First you'll need to pour your rum into your glass. I used this much which I think is about 2-3 shots. A good measure. This helps to cool the coffee as well so that you have no chance of smashing the glass when the boiling water hits.

I put about 2 table spoons of coffee into the filter and then sat it on top of the glass before filling with boiling water:


Just let all the water filter through (lid on) and meanwhile whip up your coconut cream using a whisk.

If you didn't know, coconut cream whips up like normal cream to form peaks if you want it to, you just gotta beat it hard. YUM.

Add a tablespoon of brown sugar to your coffee when it's filtered and stir it in. I used this:

Billingtons Dark Muscovado sugar unrefined


Stir that in and then slowly pour your whipped cream on top and finish with an extra sprinkle of sugar!

  3. this sounds so heavenly! My favorite coffee is Barnie’s White Christmas, which is a coconut coffee. So I think this recipe is genius, pure genius! Love this whole coconut rum and ccoffee thing. I am definitely making this version!
