Salad For Breakfast

We all need breakfast inspiration right? Come on, it's the meal that most of us cannot be f***ed to deal with, except at weekends...

We are also all guilty of not preparing these paleo egg muffins the night before too...

 This is brain food. We all need to eat more uncooked greens. Dress them up with olive oil and balsamic, layer on any other veg you have in the fridge and then add healthy fats and protein.

Savoury food for breakfast keeps you satiated longer as it doesn't mess around with your blood sugar levels too much. 


Salad's pretty boring and tedious for breakfast, right? 
Well, if you think about it, it's only a few hours before lunch and you wouldn't think twice about having salad for lunch would you? If you would you may be on the wrong website! (don't go, though!)

But if you crack out a load of veg for breakfast, you are doing yourself a real favour. Not only have you got in loads of those "5 a day" boys, but you're getting fibre, which satisfies you, helps your digestion & your skin, everything!

Add to that some fats, which are easy to prepare like avocado (which is the easiest fat to prepare; just cut it open) and a couple of boiled eggs, which don't take any effort - 5 mins in a pot of boiling water. 

So, the whole ensemble takes five minutes, while you blow dry your hair/find your keys/stroke your dog/watch Thomas The Tank Engine/Do a wee/De-ice your car/tell yourself everything is going to be OK, or whatever else you do in the morning.
