VIDEO: White & Milk Chocolate Raspberry Cookies

White & Milk Chocolate Raspberry Gooey Cookies... Make them for someone or just EAT THEM ALL YOURSELF! Very easy and only 18 minutes in the oven! 

These cookies are a twist on This Recipe From Turquoise Lemons  - that's without the milk chocolate. She just went for the classic white chocolate and raspberry combo. I added milk chocolate because I love it and I think it goes really well with raspberries too - plus everyone loves double chocolate!

225g softened butter
150g caster sugar
250g self raising flour
1 large egg
100g white chocolate- smashed up
100g milk chocolate - smashed up
50g chopped raspberries 

To Make:

Pre-heat your oven to 180 (what else!)
Mix your sugar with your melted butter - just melt it in the microwave for a few seconds...
Beat the egg into it...
Then fold in the flour little by little...

Now you can mix in all the good bits - the chocolate and the raspberries! 
N.B Be careful not to eat too much, like I did, or else your cookies will not be as good (obvs)

Form them into little patties - they will be VERY sticky and then put them on a couple of baking trays lined with parchment with adequate space in between because they will grow to be giants and they need space to breathe. 

Bake them in the oven for around 18 mins or until golden and then leave to cool!
