Artichoke, Mozzarella, Tomato, Pine nut, Parma Ham Pizza With Wild Garlic Pesto

by - June 25, 2016

Shop bought pizza bases + home made wild garlic pesto and an adornment of other tasty gems  = pimped pizza that's totally gorgeous & ready in 20 minutes

Making your own pizza is super satisfying - you can of course add WHATEVERTHEF*CK you want, you won't pay more than £12 and you get the pride of creating a masterpiece.

I think pizzas should be topped as high as possible. Like sandwich fillings: More is more.

Beautiful ingredients mean beautiful results and this combination is heavenly. It's rare for a pack of parma ham to last for more than a day without being devoured and that can also be said for a jar of artichokes in this house. I get given jars of artichokes for my birthday because I love them so much!

Don't skimp on tomatoes either, vine tomatoes always give a better, deeper flavour - you can tell that by the gorgeous smell and intense red colour. Stay away from anemic looking orange cheap ones.

The pesto I used is wild garlic, which was foraged locally and this recipe shows just how versatile it is. It's so worth making - you can smear it on pizza, stuff it inside chicken, stir it into pasta, courgetti and just fold it into omelettes to name just a few ideas.

Spread yourself a healthy amount of pesto onto the pizza base, arrange all your toppings, whack it in the oven on 180 for around 10 minutes and then finish with extra virgin olive oil, rocket and a squeeze of lemon.
