Kale, Balsamic, Cheddar & Almond Pesto

Punchy little pesto which is a great all-rounder. Use it on pasta, spiralized veg, straight onto cheese, in sandwiches, on salads, on omelettes, on chicken you name it, she loves it....


I saw a Tweet from a guy called Luke Walter, who always tweets about good food, in response to one of my recipes - think it was the courgetti beef sliders (click here for that) who said the following:

 ...and when I quizzed him about his kale pesto he told me he'd done it with cheddar and all by hand. Sounded good and I had kale AND cheddar in the house, no walnuts though so I subbed ground almonds and without as much lemon as I'd liked to have had, I added balsamic on the off chance it would work and it's lush! Bear in mind it's the SWEET and slightly thick, gloopy balsamic that comes in 'glaze' form, not the straight up vinegar. Not sure what that would do to it. 

So far I've had it on pasta, on an omelette and straight onto cheese. It works really well dolloped onto slices of brie as canapes...


INGREDIENTS

Handful of kale - raw
About 25g cheddar
About 50g ground almonds
2 garlic cloves 
Huge glug of extra virgin olive oil
Squeeze of lemon 
Big drizzle of sweet balsamic glaze 
Pepper


Blend it!
