SICK FOOD #1: Turkey & King Prawn Ramen with Courgette Noodles (Paleo)

Whoever believes that cooking nice things for themselves isn't worth it is silly. You are the most important person in your life and it IS worth making something nice just for you. It will also make you better at cooking (and it's good to get practise in for when you may have a guest). Being ill with the flu sucks but being at home with the ability to know exactly what your body wants is an upside. Hot drinks and chicken soup always get a look in, as old wives tale faves but ramen blows them both out of the water.


Traditionally, it's made with noodles - soba, egg, glass, whatever, but I wanted to keep it paleo so opted for courgette noodles. That's the beauty of a ramen - you can use whatever you want.

The stock was inspired by Rosie's recipe of one jelly chicken stock pot in 500mls water, 2 tablespoons soy sauce, 2 tablespoons chilli paste, 1/2 tablespoon fish sauce and a minced garlic clove. The garlic clove was MASSIVE. Garlic is antiviral and will help speed your recovery process.
Soft boil some eggs (only used one but it's good to have spare boiled eggs around for convenience) for 5-6 minutes and then plunge them into a bowl of cold water before peeling.
In the mean time, add the courgettes and mushrooms to the stock for a couple of minutes (they need hardly any cooking time) and griddle the turkey and prawns. I like raw spinach so added it last minute, with the spring onion and finely sliced chilli and a squeeze of lemon at the end.

Spicy, garlicky, packed with protein to rebuild all your energy and so many nutrients from the greens, this should have you sweating it out, awakening from your foggy cold-head and better in no time. Give it a try and let me know how it goes! xxx
