Warm Ratatouille Salad with Feta, Balsamic and Halloumi

-An easy and cheap vegetarian recipe which a ratatouille feel and a balsamic kick.

This is an original RR recipe as requested by Helen Taylor designed to feed Kerri Dennis. Two beautiful women I'm lucky to know.
Serves 2 so double/triple/play around with the quantities as you need

Get this lot together:

1 Aubergine
1 courgette
5 or so mushrooms
5 ripe vine tomatoes (The deeper the red the better. Smell the stalk of the vine it's fit)
Olive oil
Mixed herbs (dried is fine)
1/4 block of feta
Balsamic vinegar
1/4 block of halloumi - or way more if you love it.
Salt and P




Pre-heat your oven to 150

Slice the aubergine thinly, the courgette a bit thicker and layer them in a big casserole dish. Drizzle with a generous amount of olive oil. Half your tomatoes and mushrooms and place on top. Scatter over a generous amount of dried herbs and season well.

Bake until soft (around 40 mins) but keep checking you dont wanna burn them

When it's done take it out and crumble some feta over it. Return to oven to keep warm.

Heat a griddle and fry your sliced halloumi until it's the texture you like and golden.

Serve the baked veggy feta mix into two bowls and drizzle a little balsamic on top. Add your halloumi and Bob is your muvva's bruvva!
