Paleo Broccoli Breakfast Pizza

Pizza base made from broccoli, ground almonds and eggs topped with a gooey baked egg, peppers, spicy pesto, tomato & balsamic. A twist on the cauliflower pizza base as another way to get your greens in!

If so you're already there, you just do the same with the broccoli instead of the cauliflower. The difference? Taste is more or less the same but the colour is different and broccoli tends to hold more water than the cauliflower - so it needs more squeezin'.

Ingredients

For the base:
2 eggs beaten to death
100g ground almonds
1 medium size broccoli
Salt & Pepper

How To:

Pre-heat that oven to 180.

Blitz all the broccoli up in a blender. Transfer to a heatproof bowl and cover with cling film. Microwave for 5 mins. Empty the steaming hot broccoli onto a clean tea towel and wait for it to cool down. When cool enough to handle, squeeze all the moisture out. Your tea towel will now stink like a wet dog. Wash it on a quick wash then it's done, out of your life and sorted. 

Mix it with the almonds, eggs and season well. 
Spread some greaseproof paper on a baking tray and oil it. 


Form a pizza base shape on that with crusty edges then bang it in the oven for like 6 mins or until a little golden round the edges. Crispy. 


Get it out, top with your chosen toppings and return for another 5-10 mins. If you're cooking an egg, position things to hold it in place, like I've done here with the tomatoes and peppers, then return to oven for around 7 mins. It's easy to over cook baked eggs because you can't see them cooking like a fried egg and the colour of the yolk changes quicker. So less is more if you want a soft yolk (and you DO want a soft yolk!)

Get it out, cut it up, eat it, save it, give it away.
