Raw Rhubarb - Fit Food and Recipes

This is fun! it's purple and green :) 100% plant based, cheap, cheerful, easy peasy lemon squeezy and DELICIOUS. Only 6 ingredients: Lemon, Courgette, Beetroot, Red Lentils, Garlic and Sesame oil and Seeds (ok, 7) and parsley (Fine, 8! but it's worth it!)

An updated version of the traditional English Classic: Fish & Chips

                          

Fish and chips, another traditional English classic that is so often bland. Here's an idea to keep the concept, as it works so well, but updated to accomodate the scientific advances nutrition has made that show we don't need carbs like white potato to complete our meals and, ironically (how has it taken us so long to realise basic, natural food is best?!) take it back to it's primal state. Here's how to create the above, all you need is £5.

Spicy Lamb Meatballs, Grilled Halloumi, Lemon Quinoa and 'Fun' Salad

This was for an old friend who took me to the Coalshed in Brighton recently so I wanted it to be delicious because he spent a lot of money on me. He demanded lamb, which I have little experience with, so it was a challenge to make something impressive whilst keeping the cost down. This has a Greek influence - grilled halloumi and tzatziki (yoghurt with mint and lemon juice) are loved by most people and go naturally with lamb so all that was needed was to zhoosh up the meatballs to give them a wicked flavour, make the salad fun and swap the expected cous cous for quinoa.

Carb-free updated version of the traditional English classic comfort food, Cottage Pie. Adapted from a Nigel Slater recipe.


This was made for my students to represent England for an International Food Evening I was hosting at the school. Having been told on many occasions that English food has a reputation for being bad, I often tell students to forget fish and chips and to really experience good English food to go to a (good) pub and get some pub grub, with a pint, for a taste of true English culture. Also having listened to their complaints of being served potatoes with almost every meal at their host families and not being a huge potato lover either, I wanted to reshape their views on English food and show them that it doesn't have to suck.
